aTHE CHARACTERISTICS OF OGLIAROLA GARGANICA
Macchia d'olio is a very high quality, light, full-bodied oil.
It is obtained from olives with high organoleptic qualities.
It is a precious oil with an intense fruity flavour.
The acid level is equal to 0.4%, more than half lower than the level established by the European Community regulation.
These characteristics provide Macchia d'olio with a high concentration of polyphenols and that green color which defines the oil obtained from Apulian "green gold" olives.

IN THE KITCHEN
Macchia d'olio adds a particular taste and aroma, enriching and amalgamating the dish on which it is used.
One piece of advice: the tastier the dish, the tastier the oil.
OUR ATTENTION
We guarantee a maximum time of 11 hours between harvesting and milling, preserving the characteristics of the oil in the best possible way.
We monitor the production in the mill so as to be able to control the production in the interest of the health quality and the organoleptic qualities of the same.
